Vegetable Cutlets

Vegetable cutlets. Super success since the kids enjoyed them so much. They turn out much better when deep fried but since we are trying to cut calories I shallow fried them.

These remind me of traveling in trains in India where the canteen serves two veggie cutlets with bread and a sachet each of butter and ketchup for breakfast during the journey.

  • Recipe :
  • Sauté the veggies like onions, grated carrots, peas, corn with ginger garlic paste.
  • Mix the above mixture when cooled with boiled potatoes.
  • Made the above into patty shape and dipped in paste of all purpose flour.
  • Patted both sides with semolina (Panko or breadcrumbs also okay).
  • Shallow fried them to golden brown.

As I said look is much better if deep fried but these taste just as good.
