How to Make a Healthy Vada Pav

A healthy Vada-Pav is nothing but a shallow fried cousin of the Indian street food that is usually made by deep frying the potatoes. We shallow fry the burger filling for a healthier version of the same dish with a 100% of the taste.

When you walk the streets of Mumbai, India this is the food that is most readily available and cheapest. It provides complete nourishment in a short time. When I was in college studying, this very dish with a glass of refreshing lemon juice would make many a lunches and dinners for me. With the advent of the healthy cooking wave that has overtaken many of us, I have been wondering if I could do a healthy take on the same dish and I am happy to announce it was as simple as shallow frying instead of deep frying. Though deep frying does enhance the taste quite a bit as the potatoes are cooked inside and out but I would say my husband and I did not miss the oiliness at all! So try it out and enjoy !

Recipe-

  • Boil potatoes and mash them in with finely cut green chilies, finely cut coriander leaves, grated ginger, salt and red chili powder.
  • Make a thin paste of gram flour with salt and red chili powder to taste.
  • Shape and make into burger like patties.
  • Dip in the thin gram flour paste.
  • Shallow fry the above till golden brown on both sides and crisp.
  • Cook each bun cut length wise with a little butter to get the top and bottom crisp.
  • Sprinkle the insides of the bun with dry garlic vada pav masala ( readily available at any Indian store or can be made at home with peanuts, while garlic, salt and whole red chilies ground roughly) .
  • Enjoy this spicy Indian veggie burger ie healthy vada pav as a snack with tea or as a meal!
