Spinach Pulao

Spinach pulao is my go to when I want to make sure kids get a good dose of green leaves. It takes 15 mins to prep and then the pressure cooker does all the work.

I had this for the first time when we were visiting lovely friends in Chicago and it’s been one of those dishes that takes me back to the wonderful time we spent there.

Recipe:

  • First I grind spinach with ginger and green chilies to gravy consistency.
  • In a pressure cooker i sauté onions and potatoes.
  • Then I add spices cumin powder, red chilli powder coating the potatoes with the flavors.
  • To this I add rice, cardamom, cloves and the spinach purée.
  • Mixing this well, I add double the amount of water as there was rice.
  • Sprinkling garam masala on this, I add more veggies like corn, carrots, beans, peas. You can add any vegetable you like to this.
  • I let this cook for two whistles and once cooked serve with a squeeze of lemon.
